Butternut Squash & Creamcheese Mint Soup

I had this soup in a guest house in Wiltshire, and loved it so much, I have been making it ever since! *drools*

1 Large Butter nut Squash
1 Celery stick
1 Small onion
A pinch of salt & pepper
1 Grated garlic clove
1 Pinch of dried mint, or sprinkle of fresh mint
1 Tablespoon of cream cheese

Chop up the butter nut squash, Celery sticks and onions into rough chunks. Boil in a small saucepan with water - until tender
Separate the Vegetables and liquid, keeping them both in different containers.
Blitz the vegetables in a food-processor, or smoothie maker - adding the juice as you go until it has a creamy texture
Add the grated garlic, and salt and pepper to your taste.

Serve in a large bowl with a generous dollop of cream cheese, and a sprinkle of fresh or dried mint. Eat and enjoy on it's own, or with a slice of bread :-)
